Spicy Garlic Vegetable Stir Fry

      This recipe came to my head at the spur of the moment. I was hungry, I needed something fast, and I needed to make with very minimal ingredients because my fridge was pretty much empty. I was left with the basics in my fridge like tomatoes, onions, and a couple other vegetables. Once I put all the random ingredients together, it created something imaginably wonderful! It was spicy, garlicky, and the perfect texture! 

I would saw that this recipe is really complicated, but that would be a lie, because this creation is probably one of the easiest stir fries you can make! It's perfect for all those people who need something quick and easy, but super filling, or people who are to lazy(aka me) and don't want to spend a lot of time cooking something. 



Spicy Garlic Vegetable Stir Fry
Serving size: 1 Person or for 2 People as a side  

Ingredients:
1/2 cup of snow peas
1/3 cup of green peas
2 medium sized tomatoes
1/3 cup of corn (I didn't add it because I am allergic to corn, but I feel like it would be a great touch)
1/2 cup of fresh baby spinach 
1/2 a small onion
4 tablespoons of water 
1 clove of garlic crushed
1/2 teaspoon of red pepper flakes (Use 1/4 of a tsp if you don't want it as spicy)
1/4 of a teaspoon of dried oregano
1/2 a teaspoon of dried basil

You can add any vegetables to your liking! If I had mushrooms and edamame I would probably add them. 

Directions:
Chop the tomatoes and onions into medium sized cubes and set aside.

In a medium sized pot add 3 tablespoons water, the crushed garlic, and the chopped tomatoes. Close the lid on the pot and bring the water to a boil on medium heat. Let it cook for 3-4 minutes, stirring it occasionally. The tomatoes should be slightly soft. 

In the same pot add the snow peas, green peas, corn, onions, and one tablespoon of water. Stir it around for 2-3 minutes, then add the red pepper flakes, dried oregano, dried basil, and spinach. Mix until the spinach wilts. 

Your done!
I like to pair this dish with a whole ton of brown rice and raw spinach                                (because carbs = happiness :))
