Buckwheat Banana Bread

Made some delicious Buckwheat Banana bread because I was craving something sweet and because there were tons of spotty bananas piling up in my house haha. So I sat down, took out a pencil, and started to create a recipe. It was hard because I have never baked something with my own recipe, but this came out amazing!


This bread was super moist and dense, with tons of ingredients that are good for you. Once you make this, you will never want to eat processed banana bread ever again!

Ingredients:
- 3 fully ripe bananas(the more ripe, the more sweet the bread turns out)
- 1/4 cup + 2 tablespoons of coconut oil
- 1 tsp of vanilla extract
- 2 teaspoons of baking powder
- 1/2 teaspoon baking soda
- 1/2 + 2 tablespoons cup coconut sugar
- 1/3 cup of water
- 2 tablespoons of cocao powder 
- 1/4 cup vegan chocolate chips(optional)
- 1 3/4 cup buckwheat flour or any flour you may desire


Process: 
Preheat oven to 350F
Dry- mix the buckwheat flour, baking soda and powder, and cocao powder together and set aside

Wet- Fully mash the bananas and set aside. Melt the coconut oil and mix it with the water, slowly stir in the coconut sugar   and add vanilla extract.

Combine: Lastly, slowly fold in the wet with the dry until fully combined. Be sure not to over mix. Line a bread pan with parchment paper or spray it with coconut oil spray. 
Optional: Fold in vegan chocolate chips, nuts, or anything you desire

Bake for 50mins-1 hour
