Vegan Mac and Cheese

Once I became vegan I haven't been eating cheese (well obviously) and a lot of unhealthy foods. I really missed that cheesy and smooth Mac and cheese. So, I sat down and created a recipe for a vegan version of Mac and Cheese!

This recipe made my mouth amazed out how much this could be healthy! 
This is a single serving
Ingredients:
-1 serving of pasta(about 1 cup dry)
- 2 heaping tablespoons of nutritional yeast
- A pinch of salt
- A pinch of pepper
- Cayenne pepper (to your liking)
- 1 tablespoon of lemon juice 
- 1/4 cup + 2 tablespoons of almond milk
- 2 handfuls of broccoli florets 

Process:
1. Cook the pasta in boiling water, drain water, and set aside 
2. In the same pot, bring the almond milk to a boil and stir in the nutritional yeast, pepper, salt, cayenne pepper, and lemon juice
3. Steam the broccoli in a seperate pot 
4. Combine the broccoli and pasta into the 'cheese' sauce and stir.
5. Let the pasta sit for a few minutes in the pot
6. Serve and enjoy!


The final touch! I topped mine off with hemp seeds to add an extra pinch of nutrition:)
