Strawberry Chia Seed Jam

Over the weekend I went to a huge strawberry festival, where they had rows and rows of beautiful strawberries waiting to be picked. All of them were so luscious, so red, and QUITE big! I ended up getting so many! It was my first time, so the excitement led to me getting a little more strawberries than expected haha:). Well, these strawberries were getting spoiled pretty fast, and there is only so many I can eat in a day because it's a very acidic fruit. I considered making muffins, but then something came to my mind. I really wanted to make something that would go perfect with peanut butter and jelly sandwiches or a topping on delicious pancakes! This recipe is super simple and can last your quite some time! So enough with the rambling, time for the recipe!

 
Strawberry Chia Seed Jam

What You Will Need:
•2 1/2 cups of strawberries 
•3-4 tablespoons of coconut sugar(add more if your strawberries are sour/tart)
•2 tablespoons of water 
•3 tablespoons + 2 teaspoons of chia seeds (add more of you want it to be thicker
•Blender or a strong food processor 

Procedure:
First pour in the chia seeds and water in a blender or food processor and blend it till the chia seeds are some what fine.
Then, add the strawberries and coconut sugar and blend till smooth

Store in an air tight jar in the for up to 2 weeks 

That's it! You can use it to top it on anything you like! :)
