Superfood Muesli/Granola (v)

I was so bored today and thought, let's create something interesting! This recipe is filled with tons of different vitamins and antioxidants from the amazing superfoods that are added in it! It's sweet and crunchy and has tons of healthy fats that help your body moving throughout the day! This is a pan toasted muesli, but I bet you can put it in the oven to make it extra crunchy!:)



This recipe is vegan, low fat, and gluten free! 
Ingredients:
- 2 cups of gluten free oats 
- 1/4 cup of pumpkin seeds
- 1/3 cup of dried cranberries
- 1/4 cup of goji berries
- 1/3 cup of dried mulberries 
- 2 tablespoons if maple syrup 
- 1 tsp of coconut oil 
- 2 tablespoons of cacao powder

You can honestly add whatever you like!


Procedure:
1. Heat a large pot with the coconut oil and pour in the oats. Keep tossing with a wooden spoon 
2. Once the oats start to turn lightly brown(4-5 minutes), add the maple syrup, pumpkin seeds, and cacao powder
3. Once the oats and pumpkin seeds turn golden brown turn the stove off and let it cool
4. Add in the cranberries, mulberries, and goji berries
Store in an airtight jar for up to a week:)
If you would like to bake the oats to make it a more of a granola like consistency, preheat the oven to 350F and add 2 more tablespoons of maple syrup. Bake for 30-40 minutes, taking it out every so often to toss it around and make sure nothing burns.
